Real talk: one of my favorite cooking wins is when a sauce does double duty. You know that Thai red curry sauce from the noodle recipe I shared recently? Make a double batch and you've got dinner covered twice this week because that same sauce is INCREDIBLE on salmon. Thai Red Curry Salmon → on the table in 20 minutes. The trick that makes it extra good: sear the salmon flesh-side down first before adding the sauce. You get this golden, slightly caramelized crust that you just don't get if you skip straight to poaching. Two extra minutes, totally worth it. Then the sauce reduces right in the pan while the fish finishes cooking and...so it tastes like you planned this whole thing on purpose. (You kind of did.) A few ways I love to round out the meal:
