🐟Pesto salmon, updated

Hi Reader,

I just gave my 2-ingredient baked pesto salmon a refresh. I cleaned up the instructions so the temperature matches everywhere, because the old page said two different numbers. Now it’s the same all the way through, and I pull my salmon at 135°F.

It’s still just salmon and pesto, and dinner is ready in 20 minutes. I added a few things people kept asking about: baking it skin-side down, why I let the salmon defrost first, and what to do if you don’t have a thermometer.

There are leftover ideas too, since there’s always some salmon left.

Hope it makes your week easier,

Hey Reader! Got a chocolate lover at your table? These are the overnight oats that gets requested on repeat at my house. It’s rich and creamy, made with chocolate syrup (homemade or store-bought both work). My favorite way to dress it up is a drizzle of melted peanut butter and a few mini chocolate chips. Hey Reader! Freshened up my Copycat Panera Pumpkin Muffin recipe. Turns out Panera actually discontinued these, so if you've been missing them, this is your best bet now. One bowl for the batter, no mixer needed, and that same streusel topping that makes them worth the effort. Also fixed a small timing error in the recipe card (bake time is 19-21 minutes, not 25) so you don't end up overbaking these. Check out the updated recipe! Hi Reader, This is the one that makes my kids think they’re getting away with dessert for breakfast. Shredded carrots, warm spices, and chopped pecans give you real carrot cake flavor without baking a thing. Want to go all in? Drizzle on a little cream cheese frosting.
